I love fruit mixed in vegetable salads, so when fall rolls around I usually start mixing apples into a lot of my veggie dishes. This is a great salad if you’re craving something different than the standard green salad. It’s pretty, crunchy, and presents a nice contrast of sweet and tangy. Feel free to swap the basil for fresh mint.
Ingredients:
1 small head cauliflower, 2 apples, olive oil, cider vinegar, S/P, and fresh basil
Instructions:
Slice the cauliflower into thin slices.
I used a mandoline to shave the cauliflower really thinly – you can also use a food processor with a slicing attachment or cut into thin slices by hand.
Slice the apples into thin slices:
Start by cutting the apple into four pieces, then
take each piece and slice into thin, uniform slices. This is the easiest way I’ve found to slice an apple.
Arrange the cauliflower and apple slices on a serving plate. Drizzle olive oil and apple cider vinegar over the salad immediately before serving. Season with S/P. Sprinkle with fresh basil.
