Slow Cooker Curry Potatoes and Chicken


  • 6-8 chicken thighs, bone-in skinless
  • 2 cans lite coconut milk
  • 4 large potatoes (I do a mix of yukon and sweet)
  • 1 can crushed tomatoes
  • 3 tbsp curry paste (you can usually buy at desired spice level)
  • 2 tbsp butter (real, good ol’ butter, it won’t kill ya)
  • cilantro & lime for garnish
  • serve with basmati rice, naan, and raita
  1. Wash potatoes and cut into large chunks
  2. Place on bottom of slow cooker
  3. Wash chicken & trim of excess fat, pat dry and place on top of potatoes
  4. Pour coconut milk and tomatoes into slow cooker
  5. Add 3 tbsp curry paste and butter
  6. Stir gently to mix
  7. Cook on high for 4 hours
  8. If you can, stir occasionally and add more curry paste if you prefer more spice
  9. Serve with rice and nan
  10. You can also make a simple raita by mixing plain lowfat yogurt w/cucumber and tomato chunks

    Looks great.. We recently bought a slow cooker to use on the road in a band tourbus.
