Thai beef and coconut rice

This is a budget friendly, very tasty recipe that is probably one of our favorite new recipes. Vegans could substitute veggie crumbles.  Fish sauce is located in the Asian food section and is pretty essential for authentic Thai cooking. However it is derived from fish so I would suggest substituting 1 tbsp. cider vinegar or just increasing the soy/ponzu sauces if you want the vegan version. Ponzu is citrus flavored soy sauce and delicious.

  • 1 and 1/4 cups jasmine rice
  • 1 can coconut milk
  • coarse salt
  • 2 tbsp. fish sauce
  • 2 tbsp. soy sauce
  • 2 tbsp. ponzu sauce
  • 1 tsp. sugar
  • 3 garlic cloves, chopped
  • 3 long hot peppers or red jalapeno chiles, seeded and sliced like matchsticks
  • 1.5 pds ground beef (80/20 fat content is best)
  • 1 cup torn basil leaves
  • Lime
  1. In medium saucepan, combine rice, coco milk, 3/4 cup water and a bit of salt. Cover and bring to a boil, reduce to simmer, cover, and cook until rice is tender and liquid has been absorbed, about 25 minutes. (Depending on how thick your coco milk is you may want to add a bit of water about half way through, you’ll be able to tell – if the consistency is too thick and the liquid is almost absorbed, add a few tbsp. water and stir to mix. You have to work with the rice to get the right consistency when using coco milk).
  2. While rice is cooking, combine fish, soy, ponzu sauces and sugar in small bowl, set aside.
  3. Heat skillet or wok, Cook garlic and half the chiles with a tad of oil, stirring constantly about 15 seconds.
  4. Add beef and cook, breaking up beef until completely browned.
  5. Add soy mixture and cook for about a minute.
  6. Add basil and remaining chiles, stir to combine.
  7. Serve over rice with lime wedges.

I suggest cold Thai beer or a light white wine to accompany.
