This is an easy pasta salad, perfect for lunch. The arugula, dressing, and goat cheese give it a lot of flavor. For lunch on the go, pack arugula separately and toss in before eating to prevent wilting.
- 1 can cannellini beans
- red onion thinly sliced
- crumbled goat cheese
- olive oil
- red wine vinegar
- dijon mustard
- Cook pasta, drain and in large bowl toss pasta with beans and goat cheese.
- Make dressing: 3 parts olive oil, 2 parts vinegar, a small drop of dijon. Mix, taste, adjust if needed and season with salt/pepper.
- Toss pasta with dressing, onion, and arugula.
