Arugula and goat cheese pasta salad

This is an easy pasta salad, perfect for lunch. The arugula, dressing, and goat cheese give it a lot of flavor. For lunch on the go, pack arugula separately and toss in before eating to prevent wilting.

  • Pasta
  • Salt/Pepper
  • 1 can cannellini beans
  • arugula
  • red onion thinly sliced
  • crumbled goat cheese
  • olive oil
  • red wine vinegar
  • dijon mustard
  1. Cook pasta, drain and in large bowl toss pasta with beans and goat cheese.
  2. Make dressing: 3 parts olive oil, 2 parts vinegar, a small drop of dijon. Mix, taste, adjust if needed and season with salt/pepper.
  3. Toss pasta with dressing, onion, and arugula.
