Creole-Seasoned Pan-Fried Tilapia

This recipe is adapted from a Southern Living recipe (http://www.southernliving.com/). I love fish because it’s so easy, light, and good for you. Serve this with salad and couscous and you have a well-portioned, healthy meal.

  • Tilapia fillets
  • Creole seasoning
  • Self-rising yellow cornmeal mix (you can find this near flour or you can mix half/half yellow cornmeal and self-rising flour)
  • Olive oil
  • Lemon

Sprinkle the fillets with a generous amount of creole seasoning on both sides. Dredge in the yellow cornmeal mix. Add fillets to a hot skillet with olive oil. Fry for about 4 minutes on each side until fish flakes easily. You’re done! Serve with lemon.
