This is a very easy recipe that has a lot of nice flavor but is low calorie. I cooked this on a panini grill – you could also use a table-top style grill or use a normal outdoor grill. Either way, brush the chicken with a little bit of olive oil first.
- Skinless chicken breast fillets
- 1 can diced tomatoes in olive oil, drained (or diced fresh tomatoes)
- Crumbled feta cheese
- Salt and Pepper
- Olive oil
- Grill chicken.
- While chicken is cooking, add tomatoes to a bowl and mix with a generous amount of crumbled feta. Season with salt and pepper.
- Spoon salsa onto chicken and serve hot.
