Mussels in Herbed Tomato Sauce

This is a cheat recipe – who really has time to scrub mussels after a day of work? So…if you don’t have time for that or if you don’t have fresh mussels available in your neck of the woods, you can buy frozen mussels at your local grocery.  You can simply defrost and rinse and they are ready to go.

  • 1-2 packages frozen mussels (depending on how many ppl you’re serving)
  • 1 can diced tomatoes
  • 1 lemon, juiced
  • Chopped onion and garlic
  • Fresh herbs such as parsley and basil
  • Olive oil
  • S/P
  1. Mix the mussels, tomatoes, lemon juice, onion, garlic and s/p in a large saucepan. Simmer on medium heat for about 10 minutes, until all mussels are open and the sauce is hot. Throw away any mussels that don’t open. Stir in chopped fresh herbs just before serving.
  2. Serve the mussels alone with crusty bread or over pasta.
