Yet another Southbeach recipe. These were really tasty, surprisingly moist and flavorful.
Dressing: In small bowl, whisk together 2 tbsp. fish sauce, 2 tbsp. rice vinegar, and pinch red pepper flakes. Set aside.
- 1.5 pd ground turkey breast (sometimes I can’t find turkey breast but just ground turkey – I actually prefer that, it tends to be moister and it doesn’t add a lot of additional fat)
- 3 garlic cloves, minced
- 2 tsp. rice vinegar
- 2 tsp. soy sauce
Mix all ingredients together. Add additional soy sauce if needed. Season lightly with pepper. Form 2-inch meatballs. Cook in a large skillet with a little bit of olive oil to prevent sticking. Turn occasionally, until browned on all sides and cooked through, about 10 minutes for each batch.
Place meatballs on lettuce leaves and drizzle dressing on top.
