Green Beans with Shallots & Almonds

I love green beans so I’m always looking for new ways of preparing them. This makes for a very tasty and easy side dish. Determine the amount of shallots, almonds, and seasonings you’ll need based on the amount of green beans you are making. You want these ingredients to complement the beans, not overwhelm them.

  • S/P
  • Fresh green beans
  • Olive oil
  • Dry Sherry
  • 1/4 to 1/2 cup sliced shallots
  • Parsley
  • Oregano
  • Almond slivers
  1. Steam or boil green beans.
  2. Toast almonds in a small pan with a bit of olive oil until golden. Set aside.
  3. Cook shallots in olive oil, season with S/P and a few dashes of sherry, until golden brown and tender – about 5 minutes on medium heat. Place the chopped herbs in the pan and cook a minute more.
  4. Add shallots and almonds to green beans, toss, and season with S/P and olive oil as needed.
