Chocolate Peppermint Bark Cookies

These are perfect holiday treats! I bought all natural peppermint bark from Wholefoods – you can get it just about anywhere during the holiday season.


  • 3/4 cup sugar
  • 3/4 cup brown sugar
  • 1 cup of butter (2 sticks, unsalted at room temp)
  • 1 large egg
  • 1 tsp. vanilla
  • 1 and 3/4 cups all-purpose flour
  • 1/2 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/8 tsp. salt
  • 3/4 cup unsweetened cocoa powder (I prefer Hersey’s Special Dark)
  • 1.5 cup of peppermint bark, chopped into bite size pieces


Preheat oven to 350, line a baking sheet with parchment.

Cream the butter & sugars in a large mixing bowl until well incorporated. Add the egg and vanilla, mix about a minute.

Whisk together the flour, baking soda, baking powder, salt, and cocoa powder in a separate bowl.

Slowly add the flour mixture to the butter, beating on medium until incorporated, but don’t overmix.

Fold in the peppermint bark chips. Roll small spoonfuls of dough into one-inch balls and place on baking sheet. Bake for 12-14 minutes. Let cool on the pan for a few minutes to set and then transfer to wire racks to cool completely.
