This is another great weeknight meal – full of flavor and really easy. Plus it’s a budget-friendly meal!
- 1 white onion, chopped
- 2 cups fresh pineapple, cut into small chunks
- 1 (1 pd.) pork tenderloin, thinly sliced
- Fajita seasoning
- Avocado, tomato, cilantro, lime for garnish
Arrange a rack in the oven about 6 inches from the heat and start the broiler. Arrange onion and pineapple on a rimmed baking sheet lined with foil. Broil until softened and lightly browned, about 6 minutes. Transfer to a large bowl and keep warm.
Arrange pork on the same baking sheet and season generously with your favorite Fajita seasoning. Cook, turning once, until cooked through, about 4 minutes each side. Transfer to a cutting board and chop into bite size pieces and transfer to the bowl of pineapple and onion. Toss to combine and fill tortillas with the pork mixture and your garnish.
