Pork & Pineapple Soft Tacos

This is another great weeknight meal – full of flavor and really easy. Plus it’s a budget-friendly meal!

  • 1 white onion, chopped
  • 2 cups fresh pineapple, cut into small chunks
  • 1 (1 pd.) pork tenderloin, thinly sliced
  • Tortillas
  • Fajita seasoning
  • Avocado, tomato, cilantro, lime for garnish

Arrange a rack in the oven about 6 inches from the heat and start the broiler. Arrange onion and pineapple on a rimmed baking sheet lined with foil. Broil until softened and lightly browned, about 6 minutes. Transfer to a large bowl and keep warm.

Arrange pork on the same baking sheet and season generously with your favorite Fajita seasoning. Cook, turning once, until cooked through, about 4 minutes each side. Transfer to a cutting board and chop into bite size pieces and transfer to the bowl of pineapple and onion. Toss to combine and fill tortillas with the pork mixture and your garnish.

    This sounds so fresh and yummy. It’s a little Asian, a little Mexican, and all good! Can’t wait to try it out with a mojito!
