Fried eggs over kale and tomatoes

Who doesn’t love a bit of breakfast for dinner? This meal incorporates breakfast goodies with healthy kale. And true to Quick & Dirty style, you can have it on the table in no time.

  • Eggs
  • Bacon, sausage, soy-sausage or whatever other breakfast accompaniment you like
  • 1 pd. chopped and washed kale
  • 2 large ripe tomatoes
  • Olive oil
  • Ponzu sauce
  • S/P

Simply place you chopped tomatoes and kale in a large pan or wok, heated to medium with olive oil. Cook, tossing and covering occasionally so it steams. If you like, add a dash or two of Ponzu or soy sauce for some added flavor. I don’t add too much because I don’t want the flavor to conflict with the eggs. It should take about 10 minutes – the kale should be tender but not limp. Fry up some eggs and bacon and serve atop the kale and tomatoes. Voila – done!
