Mint Lemonade

Yummm. With summer around the corner what could be better than fresh lemonade? I actually use less sugar than most recipes call for but I find there is plenty of sweet and lots of pucker. The mint is a nice refreshing addition.

In a large sauce pan heat 1 cup sugar and 1 cup water over medium-high. Stir until sugar dissolves and remove from heat. Stir in 1 cup fresh lemon juice (about 6 lemons). Pour into a large pitcher and add water to fill. Stir in about 1/4 cup chopped fresh mint leaves. Refrigerate until cool. Serve over ice. The mint is perfectly fine to drink or you can strain it out before serving.

Serves: makes a 1/2 gallon pitcher
