Prosciutto Salad Caprese

Having an Italian dinner party and not sure of what to serve as the appetizer? This is a “meatier” take on the traditional Caprese Salad -very easy and quite pretty in presentation. For a light weekend meal I serve this with a big green salad and red wine. The key here, and with most simple whole foods recipes, is quality ingredients.

Simply slice high quality buffalo mozzarella, stack with slices of juicy ripe tomato and fresh basil leaves, and top with rolled slices of high quality prosciutto. Stack 2-3 times to create a tower. Drizzle with high quality olive oil and balsamic vinegar.
