Two of my favorite vegetables pair for a super simple side – spinach and shallots. I like to prepare spinach as a side quite often because it’s so easy and nutritious, but sometimes I fall into a repetitious spinach with lemon and salt pattern. This is a way to add a unique flavor and more nutrients to already amazing spinach.
Simply heat about 2 tbsp. olive oil in a large pot or dutch oven. Add 2 shallots (halved and thinly sliced) and season with S/P. Cook until tender about 4 minutes. Add 1 pound spinach and cook, tossing, just until wilted and bright green. Stir in 1 tbsp. fresh lemon juice; taste and adjust seasoning if needed. Serve immediately with your main course. This would go great with a delicious filet, pork, or salmon dish!
