Bold & Spicy Sloppy Joes

I’ve always been a fan of Sloppy Joes; as a kid, however, I would have been perfectly content with the classic Manwich Sloppy Joes.  My tastes are slightly more refined at this point in my life and these Joes not only taste much better, but contain fresh vegetables and way less sodium! I love my Sloppy Joes on onion rolls with a slice of Swiss cheese … yum! This recipe can easily be subbed with ground turkey or vegetarian crumbles.


  • 3 tomatoes, finely chopped
  • 1/2 small red onion, minced
  • 1 green pepper, finely chopped
  • 1 red pepper, finely chopped
  • 1 jalapeno, minced
  • 1/4 cup fresh cilantro, chopped
  • 2 limes, juiced
  • Canola oil
  • 1 and 1/2 pounds ground beef
  • 6 tbsp. tomato paste
  • 2 tbsp. sugar
  • Rolls and optional cheese for serving


Combine the tomatoes, onion, peppers, jalapeno, cilantro, and lime juice in a bowl and set aside.  Heat a skillet over medium-high heat and add a splash of canola oil. Add the ground beef and brown, breaking up the meat, until there is no more pink.  Add the vegetable mixture, tomato paste, and sugar and stir to combine. Bring to a simmer and reduce heat to low. Simmer on low about 30 minutes, stirring occasionally.  Spoon mixture onto (preferably toasted) rolls and serve warm.
