How to: Candied Bacon

Who would have thought bacon could be even more delicious than its normal, crispy perfection? I couldn’t have imagined until I had a piece of candied bacon served sticking out of a Bloody Mary and later with scrambled eggs at a completely different breakfast joint. (Atlanta has the best eats!). I quickly realized I needed to try this at home … what a way to spice up weekend brunch at home! This is super easy and really “wows” guests who have never had a sweet, sticky, crispy slice of bacon.

Prepare a baking sheet by completely covering it with foil (it makes clean-up so much easier this way – when cooled, pull the foil off and discard). Preheat your oven to 375 degrees. Simply cover a large plate with a layer of brown sugar. Add a bit of cinnamon and stir around so you have a nice layer of brown sugar and cinnamon. One by one, press each slice of bacon into the brown sugar, flip and press the other side. It’s okay if the bacon is not completely covered with sugar, you will get enough sweetness with the patchwork sugar coating you will probably end up with.  Lay each slice of bacon on the baking sheet, placing right next to each other if needed to fit all the slices. Bake for about 20 minutes, or until you reach your desired level of crispiness, drain on paper towels and … DEVOUR!
