This is what I consider the ultimate late-night snack. Not that you can’t eat this ridiculously delicious and decadent sandwich any time of the day.
But, seriously, can you think of anything better to satisfy a late-night hunger? You have the sweetness of raisins, the saltiness of bacon, and the satisfying gooeyness of melted cheddar. I have a hard time eating just one of these – they are that delicious.
And super easy to make, of course. A late-night snack must be quick, so when I know I plan to make these I bake an entire package of bacon before hand and keep it stored in the fridge. Then all you need to do is assemble and cook. Try to contain yourself while you wait for it to cool. 😉
- 4 slices raisin bread
- 4 slices white cheddar cheese
- 6 slices cooked bacon
- Preheat panini grill. Butter one side of each piece of raisin bread. Keeping the buttered side of bread on the outside, layer the inside with cheese, 3 slices bacon, and cheese again.
- Grill until the cheese is melted and bread is crisp and browned. Serve immediately.
