Thanksgiving Side Dishes: Cauliflower with Apples and Walnuts

Another easy-peasy side dish to add to the Thanksgiving menu. I love vegetable dishes that incorporate fruit and this is a good one. It’s a one-skillet dish that is done in under 30 minutes … so you have more time to work on the dessert and hand-mashing those potatoes. 🙂

Ingredients
  • 1/4 cup chopped walnuts (or pecans)
  • 2 tbsp olive oil
  • 2 shallots, chopped
  • 1 head of cauliflower, cut into florets
  • S/P
  • 2 red apples, thinly sliced
  • 1 tbsp. fresh thyme leaves
  • 2 tbsp unsalted butter
Instructions
  1. Heat oven to 350 degrees and spread walnuts on a rimmed baking sheet. Bake, stirring occasionally, until fragrant and golden, about 5 minutes. Remove from the oven and set aside.
  2. Heat the oil in a large skillet over medium-high heat. Add the shallots and cook until softened, about 5 minutes. Add the cauliflower and season with S/P. Cook, tossing occasionally, until golden, about 5 minutes. Add the apple, thyme, and 1/4 cup water. Cover and cook until the cauliflower is tender, another 8-10 minutes. Stir in the butter and walnuts. Serve warm.
