Goat Cheese and Roasted Pear Crostini

Happy New Year everyone! May 2010 bring you many good meals with family and friends!

I love the combination of goat cheese and fruit – these apps capture that perfect combination on a nice toasted baguette. What’s better is they are easy to make and on the healthy side to boot. And perfect with champagne!

  • 1 french baguette
  • 2 pears
  • 1.5 cups goat cheese
  • Fresh parsley
  • Olive oil
  • Maple Syrup (1/2 cup)
  • Lemon juice (1/2 cup)
  • S/P

Preheat oven to 400 degrees.

Slice baguette into 1/2 inch wide slices, brush both sides with olive oil. Bake, flipping halfway through, until golden and crisp – about 5 minutes.

While the bread is baking, slice the pears into thin wedges and place in a large bowl. Make a dressing of maple syrup, lemon juice, and S/P and toss pears. Arrange pears on a baking sheet and roast about 15 minutes until tender. Crumble goat cheese and mix with chopped parsley.

Arrange the crostini by spreading the goat cheese on top and placing 1-2 pear slices on top.
